Cheese rolls cop a lot of unwarranted disrespect

Unwarranted disrespect is also bullying and we’re trying to stamp that out in eN-Zed. We’re better than that.

Some say cheese rolls aren’t an epicurean gem; they’re wrong. But that’s just an opinion, not disrespectful, just a different gut-feeling. We’re allowed differing opinions. The seriously dissy disrespect comes for the wannabes who think they can tart-up the unpretentious, been-made-like-this-for-decades Southland cheese roll with such things as Dijon mustard or whole-grain, gluten-free, halal bread or avocado and heritage tomatoes. Flipping heck…, haven’t they heard the lipstick on a pig thing? Don’t they get it? Southland is at the functional end of eN-Zed, not the pretty, decorative end. Southland food nourishes and satiates; it doesn’t prance about like a fashion model, you know, like a feijoa and passionfruit macaroon.

Cheese rolls go like this: white, sandwich-sliced (ultra-thin, ultra-fresh) bread, a white-sauce (Roux method only) filled with chopped onion and strong cheese (what used to be called Tasty). Spread the cheesey-oniony sauce gloop onto the slices of bread. Roll them up, lengthwise, not diagonal (functional, not tarty-fancy!!). No toothpicks and don’t you dare cut the crusts off. They’ll make your hair go curly. Everyone knows that. Swipe some butter along the top side. Squish them all close together in your oven’s big roasting dish. You’ll be making 30 or 40 of them because these are Southland things, not Remuera things. Grill them till they’re crispy and golden; a little char is fine. Roll them over, butter the new top side and grill them again.

Take them to the local hall at around 7 o’clock where you and your neighbours will play euchre or 500 till about 9 o’clock. Around 8:30, you’ll put the cheese rolls into the oven in the tea room which is off one side of the hall, on a low heat and when the tea’s ready, the cheese rolls will be too. You’ll not have to worry about whether they’re still good to eat tomorrow because there won’t be any left for tomorrow, duh!

This is how we rid eN-Zed of bullying; we stand up for the little guy or girl.
